It’s not grainy. It was just a bit bubbly as I’d just taken it off the stove. I used a paste from Macro and added it to some coconut milk.

As much as people ragged on it, I bet this tasted amazing.

Top tip for omelette that I learned while in Thailand. When beating your eggs, add a dash of fish sauce. Not so much as to seriously influence the flavour, but just enough to enhance the flavour.
